Grains As A Healthy Diet
Do you know that the grains used to make many food products are actually the seeds of different types of grass. These seeds contain a significant source of nutrients that are essential to the human body.
Grains can be classified as Refined or Whole.
Whole grains have three nutritional parts throughout processing.
The outer part of the seed, the bran, contains most of the fibre.
The endosperm, or kernel, is the largest part of the seed and contains small traces of vitamins and minerals.
The germ is the heart of the seed and contains a concentrated amount of nutrients. They are a good source of Vitamin E, fibre and magnesium.
Examples of whole grains and cereals are whole wheat, un-hulled barley, whole rye, buckwheat or kasha, and corn. Other less common types of grains and cereals are millet, muesli, amaranth, quinoa, sorghum and triticale. Wheat kernels, such as bulgur and wheat berries, Wild and brown rice, along with whole oats and oatmeal, are also whole grains or unprocessed grains.
On the contrary, refined grains and cereals are milled, a process that removes the bran and germ from the seed whereby the original fiber content of the grain is lost. These types of foods are white rice, grits and processed de-germinated corn foods like cornbread and tortillas.
Brown rice has been getting much attention nowadays as many people are concerned about high-carb diet that leads to diabetes and obesity. Brown rice is white rice with the shell or germ layer ( whole grain aka unpolished ) is found to have some fibre and vitamins. It is very helpful in assisting constipation by bulking up the stool. Too much of it can exacerbate constipation by slowing down the metabolism.
If Brown rice is good then why white rice is eaten by the Asians as their staple food for so many years. There must be something good. They found it easier to digest. Though lack in vitamins and nutrients they make it up with fish and meat dishes during meals to have a balance diet.
